Grape varieties
Spergola
Origin
The grapes are grown in Rivalta (RE) using organic methods.
Processing
The harvest is done manually to optimize the quality of the final product. The must, separated from the skins, is obtained by soft pressing and is fermented, without the addition of sulphites and without chemical clarifications, at a controlled temperature of 18° C in steel tanks. A light sediment settles on the bottom of the bottle, the result of natural fermentation, which testifies to the genuineness and authenticity of the process.
